Soak the dates in water overnight to get them plump and juicy, then drain the water (set it aside in a bottle to use for other recipes).
Blitz the dates in a food processor until you get a smooth paste
Add the peanut butter and process until smooth.
Tip your date + peanut paste into a large bowl and add the cocoa. Mix it thoroughly with a spoon until well combined (start it slowly, and take care not to get the cacao everywhere... that's what happened to me).
Mix in the rest of the dry ingredients until everything is mixed evenly.
Pour extra coconut into a separate small bowl to use for rolling the balls in.
Wet your hands (or use food-safe gloves), and scoop a bit of the mixture with your fingers and roll into a ball. A spoon or ice-cream scoop helps to get consistent sizes
Roll it gently in the desiccated coconut and set on a platter/container. Repeat until the mix is finished.
Refrigerate them to set (about an hour).
Enjoy as a snack, a morning pick-me-up or after dinner for dessert.
