This smoky chorizo and chicken pasta recipe is so easy it’s become one of my top 5 go-to recipes whenever I have less than 30 minutes to cook dinner. I can literally walk in the door at 7pm and have this plated and ready to go by 7:30, while still having time get changed out of my work clothes and get Mr 4’s hands washed.

A set and forget pasta sauce recipe that toddlers and those kids at heart will love.
Serves: 4
Ingredients
- 250g pasta
- 1 teaspoon oIive oil
- 2 cloves garlic
- 2-3 chorizo sausages, sliced
- 500 grams chicken, sliced
- 1 tablespoon smoked paprika
- 400 gram jar of tomato passata
- 2-3 cups of spinach
- 2 tablespoons flat leaf parsley (to serve)
- parmesan cheese (to serve)
Instructions
- Set water to boil in a medium sized pot (for your pasta).
- Heat olive oil in a deep medium sized pan.
- Fry chorizo until brown and crispy, then add garlic, chicken and smoked paprika.
- Add pasta to your pot of boiling water with a dash of salt and oil. Cook as per packet instructions.
- Once the chicken is brown, stir in the tomato passata and simmer for 10-15min until sauce thickens.
- Stir spinach through the pasta sauce.
- Drain your pasta and serve with your smoky pasta sauce, parsley and parmesan cheese.
